    • 1 onion, diced
    • 3 cloves of garlic, minced
    • 1 tablespoon ginger, grated

    • 1 can (400 ml) coconut milk
    • 2 cups mixed vegetables (carrots, bell peppers, broccoli, etc.)
    • 1 can (400 g) chickpeas, rinsed and drained
