Ingredients:
- 1 Aubergine
- 1 Red bell pepper
- 1 Yellow bell pepper
- 1 Green bell pepper
- 2 Courgettes
- 1 Onion
- 3 Goats of Garlic
- 1 can Diced tomatoes
- 2 tbsp Olive oil
- Salt and Pepper, for taste
Instructions:
- Chop all the vegetables into small cubes.
- In a large pan, sauté the onions, garlic, and peppers with olive oil.
- Add the aubergine and courgette to the pan and mix well.
- Pour in the diced tomatoes and stir, season with salt and pepper.
- Let it simmer on a low heat for around 45 minutes. Stir occasionally.
- Serve the Ratatouille warm and enjoy every bite!
