Ingredients:

    • 1 bunch of fresh asparagus
    • 1 cup of fresh green peas
    • 1 cup of Arborio rice
    • 1 clove garlic, minced
    • 4 cups vegetable broth
    • 1/2 cup dry white wine
    • 2 tbsp olive oil
    • Salt and Pepper to taste

Instructions:

    1. In a large pot, heat the olive oil over medium heat. Add the garlic and cook until aromatic.
    2. Add the rice and stir until it becomes translucent.
    3. Pour in the wine, stirring continuously until the liquid is absorbed.
    4. Add the broth, one cup at a time, stirring and making sure each cup is absorbed before adding the next.
    5. When the rice is almost done, add the asparagus and peas. Stir for an additional 3-4 minutes.
    6. Season with salt and pepper and serve warm.
