Ingredients:

    • 4 boneless, skinless chicken breasts
    • 2 teaspoons ground cumin
    • 2 teaspoons ground coriander
    • 1 teaspoon ground turmeric
    • 1 teaspoon paprika
    • 1 teaspoon ground cinnamon
    • 2 cloves garlic, minced
    • 2 tablespoons olive oil
    • 1 cup couscous
    • 1 1/2 cups vegetable broth
    • 1 orange, zested and juiced
    • 1 lemon, zested and juiced
    • 1 lime, zested and juiced
    • 1/4 cup fresh cilantro, chopped
    • Salt and pepper, to taste

Instructions:

    1. In a small bowl, mix together the cumin, coriander, turmeric, paprika, cinnamon, minced garlic, olive oil, salt, and pepper.
    2. Rub the spice mixture onto both sides of the chicken breasts. Let them marinate for at least 15 minutes.
    3. Meanwhile, in a medium saucepan, bring the vegetable broth to a boil. Remove from heat and stir in the couscous. Cover and let it sit for 5 minutes.
    4. Fluff the couscous with a fork and add the orange zest, lemon zest, lime zest, orange juice, lemon juice, lime juice, and chopped cilantro. Mix well.
