Ingredients:
- 1 lb Chicken Thighs
- 1 cup Basmati Rice (rinsed)
- 2 cups Chicken Broth
- 2 Carrots (diced)
- 1 Onion (diced)
- 2 tsp Garlic (minced)
- 1 tsp Rosemary (dried)
- Salt and Pepper (to taste)
Instructions:
- Turn on the Instant Pot and set it to ‘saute’. Add the chicken thighs, season with salt, pepper, and brown on both sides. Remove and set aside.
- Add the onion, carrots and garlic to the pot, saute until softened.
- Add rice, chicken broth, rosemary and place the browned chicken on top.
- Secure the lid, set the pressure release to ‘sealing’ and cook on ‘high pressure’ for 10 minutes.
- Let the pressure naturally release for 10 minutes, then manually release the remaining pressure.
