Ingredients:
- 1 cup of Quinoa
- 2 cups of Vegetable Broth
- 1 diced Red Onion
- 1 diced Red Pepper
- 1 cup of Chickpeas
- 1/2 cup of diced Green Olives
- A handful of chopped Parsley
Instructions:
- Rinse the quinoa thoroughly under cold water.
- Heat the broth in a medium pot and add the quinoa. Bring it to boil and then simmer until the quinoa is fluffy and the broth is absorbed.
- In another pan sauté the onions and peppers until they are crisp.
- Combine cooked quinoa, sautéed veggies, chickpeas, olives and parsley in a bowl. Mix well and serve hot.
