Ingredients:
- 1 cup quinoa
- 2 cups water
- 1/4 cup extra-virgin olive oil
- 2 limes, juiced
- 2 teaspoons ground cumin
- 1 teaspoon salt
- 1/2 teaspoon red pepper flakes
- 1 1/2 cups halved cherry tomatoes
- 1 can black beans, drained and rinsed
- 5 green onions, finely chopped
- 1/4 cup chopped fresh cilantro
- 1 diced bell pepper
- 2 cups baby arugula
Instructions:
- Place quinoa in a saucepan with water and bring to a boil. Reduced heat, cover and simmer until quinoa is tender and water has been absorbed, 15 to 20 minutes.
- In a large bowl, whisk olive oil, lime juice, cumin, 1 teaspoon salt, and red pepper flakes together to create the dressing.
- In the bowl with the dressing, mix in quinoa, tomatoes, black beans, green onions, bell pepper, and cilantro. Stir until well mixed.
- Top with arugula and gently toss to combine.
