Ingredients:

    • 250g Tempeh
    • 1 Red Bell Pepper
    • 1 Green Bell Pepper
    • 1 Yellow Bell Pepper
    • 1 large Cucumber
    • 200g mixed Salad Greens
    • 1 tbsp Olive Oil
    • Salt and Pepper (to taste)

Instructions:

    1. Cut the tempeh into slices and brush them with olive oil, salt, and pepper.
    2. Grill the tempeh for 4-5 minutes on each side or until it has nice grill marks.
    3. Slice the bell peppers and cucumber and mix them with the salad greens in a large bowl.
    4. Once the tempeh is done, let it cool and then add it to the salad.
    5. Add your favorite dressing or keep it simple with a squeeze of lemon juice and a drizzle of olive oil.
We’ve combined the smoky, nutty flavor of grilled tempeh with the freshness of a mixed vegetable salad. This delightful meal, a classic example of the “Grilled” category, showcases that a balanced diet need not be boring.
