Ingredients:
- Four large bell peppers
- One cup quinoa, cooked
- One cup black beans, boiled
- One cup corn kernels
- Half cup cheddar cheese, shredded
- Two tablespoons olive oil
- One medium-sized onion, chopped
- Two cloves of garlic, minced
- One teaspoon dry oregano
- Salt and pepper to taste
Instructions:
