    • Four large bell peppers
    • One cup quinoa, cooked
    • One cup black beans, boiled
    • One cup corn kernels
    • Half cup cheddar cheese, shredded
    • Two tablespoons olive oil
    • One medium-sized onion, chopped
    • Two cloves of garlic, minced
    • One teaspoon dry oregano
    • Salt and pepper to taste

Instructions:
