Ingredients:

    • 200g dark chocolate
    • 200g unsalted butter
    • 200g caster sugar
    • 4 large eggs
    • 200g gluten-free flour blend
    • 1 teaspoon baking powder
    • 3 tablespoons cocoa powder
    • 150ml milk
    • 1 teaspoon vanilla extract
    • 100g dark chocolate chips
    • 200g icing sugar
    • 50g cocoa powder
    • 100g unsalted butter, softened
    • 2-3 tablespoons milk

Instructions:

    1. Preheat the oven to 180°C (160°C fan) and grease two 20cm round cake tins.
    2. Melt the dark chocolate and unsalted butter together in a bowl set over a pan of simmering water. Stir until smooth and then remove from heat.
    3. In a separate bowl, whisk the caster sugar and eggs together until pale and fluffy.
    4. Gradually add the melted chocolate mixture to the egg mixture, whisking constantly.
    5. Sift in the gluten-free flour blend, baking powder, and cocoa powder. Fold gently until well combined.
    6. Add the milk and vanilla extract, and mix until the batter is smooth.
    7. Stir in the dark chocolate chips.
    8. Divide the mixture evenly between the prepared cake tins and smooth the tops.
    9. Bake in the preheated oven for 35-40 minutes, or until a skewer inserted into the center of the cakes comes out clean.
    10. Remove from the oven and allow the cakes to cool in the tins for 10 minutes before transferring to a wire rack to cool completely.
    11. To make the frosting, sift the icing sugar and cocoa powder into a large bowl. Add the softened butter and milk, and beat until smooth and creamy.
    12. Place one cake layer on a serving plate and spread a layer of frosting on top. Place the second cake layer on top and cover the entire cake with the remaining frosting.
    13. Decorate with chocolate curls or sprinkles, if desired. Serve and enjoy!
