Ingredients:
– 2 cups of all-purpose flour
– 2 tsp baking soda
– 1/2 tsp salt
– 1 tsp ground cinnamon
– 1/2 tsp ground ginger
– 1/4 tsp ground allspice
– 3/4 cup vegetable shortening
– 1 cup granulated sugar, plus extra for rolling the cookies
– 1/4 cup molasses
– 1 large egg (Substitute with flaxseed for egg-free option)
Instructions:
1. Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper.
2. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, and allspice.
3. In a large bowl, beat the shortening with a mixer on medium for 30 seconds. Add the 1 cup of sugar and beat until well combined.
4. Beat in the molasses and egg.
5. Gradually beat in the flour mixture.
6. Shape the dough into 1-inch balls. Roll in extra sugar and place 2 inches apart on the prepared baking sheets.
7. Bake for 10 minutes or until edges are firm and tops are cracked.
8. Let cool on wire racks.
