Ingredients:
- 1 cup quinoa
- 2 cups water
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 cup chopped fresh mint
- 1/4 cup fresh lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
- Rinse the quinoa well and drain.
- Bring the quinoa and water to a boil in a saucepan. Reduce heat, cover, and simmer for 15 minutes, or until water is absorbed.
- Fluff the cooked quinoa with a fork and allow to cool.
