Ingredients:

    • 1 Aubergine
    • 1 Red bell pepper
    • 1 Yellow bell pepper
    • 1 Green bell pepper
    • 2 Courgettes
    • 1 Onion
    • 3 Goats of Garlic
    • 1 can Diced tomatoes
    • 2 tbsp Olive oil
    • Salt and Pepper, for taste

Instructions:

    1. Chop all the vegetables into small cubes.
    2. In a large pan, sauté the onions, garlic, and peppers with olive oil.
    3. Add the aubergine and courgette to the pan and mix well.
    4. Pour in the diced tomatoes and stir, season with salt and pepper.
    5. Let it simmer on a low heat for around 45 minutes. Stir occasionally.
    6. Serve the Ratatouille warm and enjoy every bite!
