Ingredients:
- 2lbs of beef stew meat
- 3 carrots, sliced
- 3 potatoes, diced
- Beef stock to cover
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tsp of salt
- 1 tsp of pepper
- 2 tbs vegetable oil
Instructions:
- In a large pot, heat the oil over medium heat.
- Brown the beef stew meat on all sides.
- Remove the meat and set aside.
- Add onion and garlic to the pot, cook until tender.
- Return the meat to the pot and add carrots and potatoes.
- Add beef stock until it just covers the ingredients.
- Simmer for 2 hours or until beef is tender.
- Adjust seasoning with salt and pepper.
- Serve warm.
