Ingredients:

    • 2lbs of beef stew meat
    • 3 carrots, sliced
    • 3 potatoes, diced
    • Beef stock to cover
    • 1 onion, diced
    • 2 cloves of garlic, minced
    • 1 tsp of salt
    • 1 tsp of pepper
    • 2 tbs vegetable oil

Instructions:

    1. In a large pot, heat the oil over medium heat.
    2. Brown the beef stew meat on all sides.
    3. Remove the meat and set aside.
    4. Add onion and garlic to the pot, cook until tender.
    5. Return the meat to the pot and add carrots and potatoes.
    6. Add beef stock until it just covers the ingredients.
    7. Simmer for 2 hours or until beef is tender.
    8. Adjust seasoning with salt and pepper.
    9. Serve warm.
