Ingredients:
- 200g of fine-quality dark chocolate
- 3 large eggs
- 200g of caster sugar
- 100g of butter
- 100g of self-raising flour
- 1 tsp of pure vanilla extract
- Pinch of salt
Instructions:
- Preheat your oven to 180C/160C fan/gas 4.
- Melt the chocolate and butter together in a heatproof bowl over a pan of simmering water.
- While the chocolate melts, beat together the eggs and sugar until pale and fluffy.
- Little by little, integrate the melted chocolate and butter into the egg and sugar mixture, stirring continuously.
- Slowly sift in the flour along with a pinch of salt, stirring gently to maintain the fluffy consistency.
- Pour the mixture into a greased, round cake tin, and bake for 25-30 minutes. The top should be firm, but the inside gooey.
- Allow to cool for 10 minutes before serving with a dollop of cream or ice cream.
