Ingredients:

    • 8 fresh ripe tomatoes
    • 6 cloves of garlic
    • 2 red chillies
    • ¼ cup apple cider vinegar
    • 1 cup of brown sugar
    • Salt to taste
    • 1 teaspoon olive oil

Instructions:

    1. Wash tomatoes and chillies.
    2. Half the tomatoes, deseed and chop them finely. Slice the chillies and garlic.
    3. Heat the oil in a deep pan, saute the garlic until golden brown.
    4. Add chillies, tomatoes and cook until soft.
    5. Add sugar, vinegar, salt and bring to a simmer.
    6. Stir occasionally until the mixture thickens.
    7. Serve fresh, or bottle it for future use.
