Ingredients:
- 8 fresh ripe tomatoes
- 6 cloves of garlic
- 2 red chillies
- ¼ cup apple cider vinegar
- 1 cup of brown sugar
- Salt to taste
- 1 teaspoon olive oil
Instructions:
- Wash tomatoes and chillies.
- Half the tomatoes, deseed and chop them finely. Slice the chillies and garlic.
- Heat the oil in a deep pan, saute the garlic until golden brown.
- Add chillies, tomatoes and cook until soft.
- Add sugar, vinegar, salt and bring to a simmer.
- Stir occasionally until the mixture thickens.
- Serve fresh, or bottle it for future use.
