Ingredients:
- 150g Digestive biscuits
- 75g Unsalted butter, melted
- 300g Cream cheese
- 100g Caster sugar
- 2 Eggs
- 1 tbsp Cocoa powder
- 1 tsp Red food coloring
- 100ml Whipping cream
- 1 tsp Vanilla extract
Instructions:
- Preheat your oven to 180°C.
- Blend the Digestive biscuits and butter together until the mixture resembles fine breadcrumbs.
- Press the mixture into the base of a 7-inch springform tin. Place in the fridge to chill.
- Whisk together the cream cheese, caster sugar, eggs, cocoa powder, red food coloring, whipping cream and vanilla extract.
- Pour the mixture over the biscuit base and smooth the surface.
- Bake in the oven for 45 minutes or until the cheesecake is set and lightly golden.
- Allow to cool and then refrigerate for at least 3 hours before serving.
