Ingredients:
- 2 lbs of Kosher Lamb Shoulder, cut into chunks
- 2 tbsp of Olive Oil
- 2 Onions, finely chopped
- 3 Garlic Cloves, minced
- 1 tbsp of Grated Fresh Ginger
- 1 tsp of Ground Cumin
- 2 Cinnamon Sticks
- 3 Carrots, chopped into chunky pieces
- 2 cups of Diced Tomatoes
- 2 cups of Chicken Broth
- A pinch of Saffron
- 1 cup of Chopped Apricots
Instructions:
- Preheat the oven to 320°F (160°C).
- Brown the lamb in oil over medium heat. Remove and set aside.
- Sauté onions until golden, add garlic, ginger, cumin, cinnamon sticks, and sauté for a further 2 minutes.
- Add carrots, diced tomatoes, broth, saffron and apricots into the mix.
- Add browned lamb back into the pot. Bring to a simmer.
- Cover the pot and bake for 2 hours in the preheated oven.
