Ingredients:
- 1 cup quinoa
- 2 cups water
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 2 tomatoes, diced
- 1 cucumber, diced
- 1 bunch fresh mint, finely chopped
- Salt and pepper to taste
Instructions:
- Rinse the quinoa under cold water until water runs clear.
- In a pot, bring quinoa and water to a boil. Reduce heat to low, cover and simmer until quinoa is tender and water has been absorbed (15 minutes)
- Allow quinoa to cool, then stir in olive oil, lemon juice, tomatoes, cucumber, mint and salt, and pepper.
