Ingredients:

    • Ripe Zucchinis – 4
    • Whole Grain Rice – 1 cup
    • Tomatoes, chopped – 3
    • Garlic Cloves, minced – 2
    • Onions, finely chopped – 1
    • Red Bell Pepper, diced – 1
    • Grated Mozzarella – 1 cup
    • Basil leaves, chopped – 8
    • Salt & Pepper – to taste

Instructions:

    1. Slice zucchinis lengthwise and scoop out the pulp, creating a boat-like structure. Set aside.
    2. Cook rice as per packet instructions and drain.
    3. In a pan, sauté onion, bell pepper, garlic, and diced zucchini pulp for 3-4 minutes.
    4. Add chopped tomatoes, cook for another 5 minutes. Season with salt, pepper, and half of the chopped basil.
    5. Mix in the cooked rice, transfer the mixture to the scooped zucchinis and top with grated cheese.
    6. Bake at 190°C for 20 minutes until cheese is golden. Garnish with remaining basil. Serve warm.
