Ingredients:
- Ripe Zucchinis – 4
- Whole Grain Rice – 1 cup
- Tomatoes, chopped – 3
- Garlic Cloves, minced – 2
- Onions, finely chopped – 1
- Red Bell Pepper, diced – 1
- Grated Mozzarella – 1 cup
- Basil leaves, chopped – 8
- Salt & Pepper – to taste
Instructions:
- Slice zucchinis lengthwise and scoop out the pulp, creating a boat-like structure. Set aside.
- Cook rice as per packet instructions and drain.
- In a pan, sauté onion, bell pepper, garlic, and diced zucchini pulp for 3-4 minutes.
- Add chopped tomatoes, cook for another 5 minutes. Season with salt, pepper, and half of the chopped basil.
- Mix in the cooked rice, transfer the mixture to the scooped zucchinis and top with grated cheese.
- Bake at 190°C for 20 minutes until cheese is golden. Garnish with remaining basil. Serve warm.
