- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 and 1/2 cups strawberries, sliced
- 24 ounces cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 eggs
- 1/4 cup all-purpose flour
- 1/2 cup sour cream
Instructions:
- In a bowl, mix the graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- Purée the sliced strawberries in a blender or food processor until smooth. Set aside.
- In a large mixing bowl, beat the cream cheese, sugar, and vanilla extract until creamy. Add the eggs one at a time, beating well after each addition. Gradually mix in the flour and sour cream.
- Spread half of the cream cheese mixture over the crust in the springform pan. Spoon half of the strawberry purée over the cream cheese layer and swirl gently with a knife. Repeat the layers with the remaining cream cheese mixture and strawberry purée.
- Bake at 325°F (163°C) for 45 minutes or until the edges are set and the center is slightly jiggly.
- Remove the cheesecake from the oven and let it cool in the pan for 10 minutes. Then, carefully run a knife around the edges to loosen. Allow the cheesecake to cool completely before refrigerating for at least 4 hours or overnight.
